This is a tremendous combination of aubergine, tomatoes, onion, red wine vinegar and harissa producing a rich and tasty salsa.

SERVING SUGGESTIONS

Used as a dip with our hummus or tahini and fresh walnut bread from your local bakery.

Heat the oven to 180oC. Get a quality pizza base. Spread Aubergine Salsa liberally over the base and add your favourite topping with some top-grade mozzarella. Place on a baking tray in the oven for 15 mins or until the cheese melts and bubbles. Serve hot with some fresh rocket.
